Since the roulade is already carefully seasoned, you hardly need to add anything yourself, just cook it gently until the core reaches a temperature of about 68°C. This keeps the meat juicy and brings out the full game flavor beautifully.

Preparing wild boar roulade
The wild boar roulade is already seasoned, so all you need to do is sear it and then finish it in the oven until it reaches the right core temperature.
- Take the roulade out of the refrigerator in time so the meat can come to room temperature.
- Pat the meat dry with kitchen paper.
- Heat butter and oil in a pan and sear the roulade on all sides until nicely browned.
- Then place the roulade in a preheated oven at 160°C.
- Use a meat thermometer to monitor the core temperature, this ensures a juicy result every time.
- For medium rare: 60 to 62°C. For medium: 65 to 68°C.
- After cooking, let the roulade rest loosely covered with aluminum foil for 10 to 15 minutes before slicing.
