COOKING VENISON GOULASH MEAT
Venison goulash meat is perfect for slow-cooked stews. Gentle simmering makes it tender and brings out its deep, rich flavour.
- Let the meat thaw slowly in the refrigerator, then bring it to room temperature.
- Pat the pieces dry with kitchen paper so they brown well in the pan.
Season with salt and pepper and dust lightly with flour. - Heat butter or oil in a large casserole and brown the meat in batches on all sides. Remove it from the pan.
- In the remaining fat, sauté some onion and garlic, and add carrot or celery if you like a deeper flavour.
- Deglaze the pan with a splash of red wine or game stock, scraping up the browned bits from the bottom.
- Return the meat to the pan and pour in enough stock to cover it halfway. Add a bay leaf, a sprig of thyme and a few juniper berries if you like.
- Bring to a simmer, cover and let it cook gently on low heat for about two to two and a half hours.
- Stir occasionally and top up with a bit of stock if it reduces too much.
