WHAT MAKES WOOD PIGEON SPECIAL?
Wood pigeon has a very distinct taste that is very similar to other wild fowl, but it is more subtle than that of pheasant, for example. The meat is very tender and juicy and has a nutty undertone. The most popular part of the wood pigeon is the breast fillets. This is due to the soft texture and intense taste. Wood pigeon has a typical wild color and is, for example, darker than chicken or turkey. The meat is lean and requires proper preparation to prevent it from becoming dry. WHAT GOES WELL WITH WOOD PIGEON?
Wood pigeon goes very well with autumnal and winter flavors that complement the intensity of the meat well. Combine the wood pigeon with earthy side dishes such as mashed potatoes or carrots or with fruity flavors such as apples and figs. The meat can be seasoned very well with thyme, rosemary, sage and bay leaf or with spices such as cloves, star anise or cinnamon. Add a delicious Pinot Noir to the table and you have a fantastic feast!

PREPARING WOOD PIGEON
Preparing wood pigeon is not very difficult, but it must be done properly to prevent the meat from drying out. Here are a few steps you can follow to put a delicious dish on the table:
- Defrost the wood pigeon and bring it to room temperature. Our wood pigeons are delivered frozen, so it is best to let them thaw in the refrigerator the day before you plan to cook them. Take the meat out of the refrigerator an hour before cooking so it can come to room temperature.
- Pat the pigeon dry with kitchen paper. This helps to develop a good crust while searing the bird.
- Season the wood pigeon well. Rub the inside and outside generously with salt and pepper, then place a sprig of thyme, rosemary and a crushed clove of garlic inside the cavity.
- Sear the pigeon for 5 to 6 minutes on all sides until golden brown. It is best to do this in a heavy pan over medium heat using a mix of olive oil and butter.
- Cook the pigeon in a preheated oven at 180 °C. Place the seared pigeon in an oven dish and add a small knob of butter on top. Roast for 12 to 15 minutes until it reaches a core temperature of 56 °C for a beautifully pink, tender and juicy result.
Tip: during roasting, spoon some of the cooking fat over the bird a few times to keep it moist. - Remove the pigeon from the oven, cover it loosely with aluminum foil and let it rest for 5 to 10 minutes. This allows the juices to redistribute and keeps the meat tender.
