What is an Iberico pork chop?

An Iberico pork chop - chuleta de cerdo - is a bone-in pork chop from the famous Spanish Iberico breed. An Iberico pork cutlet cannot be compared to the (also tasty) cutlets we know in the Netherlands. Iberico meat is actually comparable to Japanese Wagyu beef. Laced with fat and with its own unique taste. Nutty, because of the many acorns that Iberico pigs eat. You really should try an Iberico pork chop!

Iberico pork

This pork chop comes from the famous Iberico pig, from the southwest of Spain. Iberico is one of the most tasty free-range breeds in the world. The animal owes this taste to its lifestyle and Mediterranean environment. The Iberico pig is dark brown with black hooves and is descended from the wild boar. They are small in size, but all the more voluminous. An adult Iberico pig easily weighs 160 to 180 kilos! The Iberico pig feeds itself on grass, tubers, herbs and sometimes even olives. However, the real work begins in autumn, when the acorns (bellotas) fall from the old oak trees. An Iberico pig eats 10 kilos of acorns per day (!). This gives Iberico that recognizable nutty taste and it provides a nice fat veining. Fat is the flavor carrier of meat and the Iberico pig illustrates this like no other. Try an Iberico pork chop and you will never want anything else!

How do you stuff a turkey?

The great thing about our famous turkey. You can slide it straight into the oven! We have even removed the carcass, making it easy to distribute the meat. The Christmas turkey is allergen-free and is filled with minced veal and pork, apricots and a secret recipe of herbs. The stuffed turkey comes with garnish, roasting bag and thermometer.

Size of container and turkey
The container in which the turkey is located is 26 by 32 cm. The height of the turkey (without the bulge of the roasting bag) is 17cm high.  

How do you prepare our stuffed turkey?

> Remove the stuffed turkey from the freezer 3 days in advance and defrost in the refrigerator (leave the vacuum bag around it while defrosting). Are you short of time? then defrost it outside the refrigerator for 1.5 days. 
> Let the turkey come to room temperature outside the refrigerator for at least 6 hours before use (also with a vacuum bag)
> the turkey is supplied in a simple construction kit.

  1. Remove the turkey from the vacuum bag and place in the supplied aluminum container. (or your own baking dish) 
  2. garnish with the included vegetables and bacon strips. If necessary, supplement with pineapple, lardo, butter, apple, fruit cocktail, etc. We have not included this because it may contain allergens.
  3. the turkey is tied up for even cooking, so leave it until it is fully cooked. 
  4. place the roasting bag around the container and secure with the supplied clip.
  5. If the roasting bag should tear, an extra roasting bag is included. (there are two in the envelope)

> preheat the oven to 180C.
> Cook the turkey in the oven for 3 hours at 160C.
> After 2.5 hours, insert the supplied food thermometer between the legs and chest. Simply pierce the roasting bag 
> check after 3 hours whether the achieved temperature of at least 70C has been reached.
> cut open the bag and put the oven at 200C for 15 minutes for a nice brown crust.
> Remove the turkey from the oven and let it rest for half an hour on the counter under a tea towel or aluminum foil.
