Beef skewers with avocado salsa (BBQ Junkie)

Ingredients

4 skewers
500 grams Diamanthaas
1 Red onion
2 Avocados
1 Lime
1 Bunch of cilantro
\ Black pepper
\ Coarse sea salt

Beef. Kebabs. Avocado. What's not to like? Avocado, in our opinion, is always a good idea. Fresh, healthy, and super tasty! And kebabs on the BBQ—well, that speaks for itself. We made this recipe with diamond tenderloin from Black Angus USA, also known as petit tender or Jewish tenderloin. Beautifully tender meat, perfect for beef kebabs. Preparing the BBQ

Take the diamond tenderloin out of the fridge and let it come to room temperature. Meanwhile, light the BBQ and aim for a temperature of about 200 degrees Celsius (direct heat). Cut the diamond tenderloin into cubes of approximately 2 cm. Quarter the red onion and separate the layers, keeping the largest pieces to thread between the diamond tenderloin on the skewers.

Preparing the Avocado Salsa

Mash the avocados (without the pit and skin) in a bowl and add the juice of the lime. Stir until smooth and season with salt and pepper to taste.

Roughly chop the coriander and set it aside.

Preparing the Beef Kebabs

Thread the cubed diamond tenderloin alternately with the red onion onto the skewers. Sprinkle with coarse sea salt and freshly ground black pepper, then place them on the BBQ. Grill the skewers for 4 minutes on each side with the BBQ lid closed. Let them rest for another 5 minutes before serving with the avocado salsa. Garnish with coriander, and you're good to go.

What Exactly Is Diamond Tenderloin?

For those who aren't familiar: diamond tenderloin is a cut from the shoulder of the cow. Unlike Bavette, this muscle gets less work, making it more tender but slightly less flavorful. Why the name "Jewish tenderloin"? Orthodox Jews are prohibited from eating meat from the hindquarters of the cow. Others know this cut as petit tender, highlighting its tenderness. It's a perfect piece of meat for threading onto skewers.
