Iberico burger with camembert and grilled apple
You can't really see them in the photo, but trust us, they're very real: Iberico burgers. A nice change from Black Angus or Rubia Gallega (which are also fantastic, of course!). A pork burger, but not just any pork, this one's made from the legendary Iberico pig. Incredibly marbled and full of rich, nutty flavour. Definitely something you should try at least once. Below you'll find a great recipe from BBQ Junkie, but honestly, even plain and simple, these Iberico burgers are insanely good!
Preparing the Iberico burgers
Fire up the BBQ and go for direct heat at around 200°C. Take the burgers out of the fridge, let them come to room temperature and season with freshly ground black pepper. Slice the camembert and do the same with the apple (don’t forget to give the apple a rinse!).
Grilling the Iberico burgers
BBQ up to temp? Place the Iberico burgers on the grate and close the lid. Grill them for about 5 minutes. Flip the burgers, place a slice of camembert on top, and close the lid again. Grill for another 7 minutes or so, until golden, cooked through, and the cheese is beautifully melted.
Take the burgers off the BBQ and let them rest for a bit. Meanwhile, grill the apple slices on both sides for 3 minutes, and toast the cut sides of your burger buns while you're at it.
Now spread a bit of mayo on the bottom half of the buns, top with lamb’s lettuce, add the burgers, and finish with the grilled apple. Lid on, and you're good to go. Easy lunch, and ridiculously tasty!
