I'm a huge fan of burgers, and it might sound silly, but I absolutely love the smaller ones on mini brioches. A big burger is great now and then, but something a bit more refined can be just as festive — it’s such a flavour bomb! We often get requests for these gourmet mini burgers at catering events. What is an Iberico citizen?

An Iberico burger is a hamburger made from the extremely tasty Spanish Iberico pig. A hamburger made from beautiful pork is always nice and juicy, but because of the intramuscular fat that the Ibérico pig is known for, an Ibérico burger is really in a class of its own. Nicely laced with fat and the nutty taste (due to the kilos of acorns that this breed of pig eats) also gives an extra dimension to the Iberico burger. Due to the fine structure and rich marbling, the meat literally melts on your tongue. Whether you opt for a classic preparation on the BBQ or serve it with a luxurious brioche bun and truffle mayonnaise, the Iberico burger takes your meal to a higher level. Heaven on a bun!

Iberico pork

Iberico pigs - Cerdo Ibérico - come from the south of Spain. We are talking about one of the most tasty free-range breeds in the world. Iberico pigs live outside and eat grasses, herbs, roots and sometimes olives. During the very dry summer months they are supplemented with grain, but the real work begins in the autumn, when the acorns (bellotas) fall from the cork and holm oaks in the area. Because it is those acorns that give Iberico meat that characteristic nutty taste. During that period, the Iberico pigs eat kilos of acorns per day, allowing them to grow to an impressive 160 - 180 kilos in a short time. The meat of Ibérico pigs is spicy and fatty, largely mono and polysaturated, therefore rich in nutrients. Another advantage of the Ibérico pig. Iberico burgers are therefore burgers that you do not eat every day. Really something different from the 'geek' beef burgers and freshly prepared in our own butcher shop by our Master Butchers.

Quick Preparation Method for Iberico Burger

Grilling/Frying: 5 minutes for medium-rare [including flipping] in oil, butter, or ghee
Sous Vide: 1 hour at 52°C, then finish on the grill
