Bison Tournedos

Bison Tournedos
Tender, lean, and packed with flavour, that’s the Bison Tournedos. This exclusive cut is perfect for anyone looking for refinement with a wild edge. Cut from the most tender part of the bison and beautifully shaped into a perfect medallion, this tournedos offers a subtle sweetness, deep meaty flavour, and delicate texture. The combination of elegance and character makes it a true showstopper on the plate. Ideal for special occasions, or simply when you want to treat yourself to something truly exceptional.
What is a Tournedos?
A tournedos is the most tender piece of meat you can get, cut from the centre of the tenderloin. It’s virtually free of fat and connective tissue, resulting in a buttery-soft texture. Since this muscle is barely used, the meat remains exceptionally tender with a subtle, elegant flavour. The tournedos is perfect for a quick sear in the pan or on a hot grill, keeping the inside nicely pink and the meat juicy and soft. A touch of salt and pepper is often all you need to let this cut shine.
Bison meat, lean, tender and nutritious
What makes this Bison Tournedos so special is the unique blend of luxury and health. Bison meat is naturally low in fat and cholesterol, yet rich in high-quality nutrients like protein, iron, zinc, and vitamin B12. It has a slightly sweeter flavour than beef and a bold aroma that shines even without marinade or sauce. Thanks to its low fat content, it calls for a short and careful preparation to retain its juiciness. This makes the Bison Tournedos not only a delicious choice, but also a conscious one, for those who enjoy pure meat with character.

Baking tournedos step by step
- Remove the tournedos from the refrigerator and packaging at least an hour in advance so that they can reach room temperature.
- Pat the tournedos dry with kitchen paper and season with salt and pepper to taste.
- Put a pan on the stove with a dash of oil (or a large knob of butter).
- Place the tournedos in the pan as soon as the oil is hot and fry for about 1 minute per centimeter per side. Is your tournedos 2cm thick? Then fry it for 2 minutes per side. Would you like to bake at core temperature? Then maintain the following core temperatures: rare 48 degrees, medium rare 50 degrees, medium 52 degrees and well done 56 degrees.
- Wrap the tournedos in aluminum foil and let rest for five minutes.
TIP: Do you bake on gas? Then keep the steak moving well. On induction it is better to leave it alone, except for running.
