WHAT IS SECRETO IBERICO?
Secreto Iberico is - the name says it all - the best kept secret of the Iberico pig. They also call this part Iberico flank. It is a special cut of the shoulders, the extension of the shoulder muscles, between the shoulders and the hard neck fat. It is claimed that this cut only occurs in the Iberico pig, but that is open to dispute. The fact is that cutting this meat part is millimeter work and that we in the Netherlands do not use this cutting technique as the Spaniards do. Secreto pork is by far the most eaten of the Iberico pig, that's for sure. And that is not without reason. The meat is incredibly veined with fat and packed with flavor. Characteristic taste, because of the kilos of acorns that the Iberico pig polishes away every day in the autumn. Secreto Iberico is truly a taste sensation that you do not experience every day and that cannot actually be compared with anything. Secreto Ibérico is also called the Wagyu of pork and we fully agree with that. Especially when it comes to this Iberico Secreto Bellota. Bellota stands for acorns and the pigs eat kilos of them. You can really taste that nutty flavor in the meat. A must-try for enthusiasts!
SECRETO IBERICO OF IBERICO CERTIFICADO
Our Iberico Secreto comes from Ibérico Certificad - or: Cerdo Ibérico - from the southwest of Spain and traditionally trimmed and cut by our Master Butchers. Iberico is known as one of the most tasty free-range breeds in the world. Not that strange either. The pigs live outside in bird food and only eat natural food such as grass, herbs, roots and sometimes olives. During very dry summer times they are supplemented with grain. But the real work begins in the autumn, when the acorns (bellotas) fall from the old cork and holm oaks. Because it is the acorns that give Iberico meat that characteristic taste. During that period, Iberico pigs eat kilos of acorns per day, allowing them to grow to an impressive 160 - 180 kilos in a short time. The pigs are relatively small in size and therefore have a high concentration of fat, mainly intramuscularly, i.e. between the muscles. It distributes very well throughout the meat. Iberico meat is therefore spicy and fatty, largely mono- and polysaturated, therefore rich in nutrients. Another advantage of the Ibérico pig. Iberico Secreto is a taste sensation.
