WHAT IS A RIBEYE?

Ribeye is cut from the rib section of the cow and is known for the fine fat structure running through the meat. That fat melts during cooking or grilling, adding extra flavor and juiciness. It's a cut with a firm structure that is best cooked hot and fast. Let it rest after cooking and then simply slice it for the best result. The meat is naturally flavorful, so it doesn't need much seasoning.

JAPANESE BLACK // KAGOSHIMA WAGYU

This ribeye comes from fullblood Wagyu cattle of the Japanese Black breed, raised in the Kagoshima region in southern Japan. The cattle are fed a carefully balanced diet and grow up slowly, which contributes to the quality of the meat. A3 with a BMS of 3/4 means the marbling is light to moderate. As a result, the meat is recognizably Wagyu, but not overly rich or soft. It’s a great middle ground for those seeking high quality with a bit more structure.

You can prepare the Wagyu Ribeye in several ways. In any case, we recommend not preparing it over direct fire due to the strong marbling of the steak and therefore always opting for a pan or grill plate.

Preparing Japanese Wagyu Ribeye

  1. Remove the Wagyu ribeye from the packaging. Our master butchers trim every steak, so it is basically ready to grill. Do you think there is too much fat in it? Then cut it off, but do not throw it away. It is ideal to use as a fat for baking.
  2. Heat the pan on the stove and make sure it starts to smoke a little. Is the pan up to temperature? Then you can start baking! If you cut off some fat from the ribeye in the previous step, start by melting this fat. Make sure it doesn't stick. Then place the Wagyu ribeye flat in the frying pan.
  3. Press the A3 Wagyu Ribeye gently with your fingers so that the meat immediately sears at the bottom in the hot pan. Due to the high fat marbling, fat will melt almost immediately in which the Wagyu ribeye fry itself. You can now turn the heat source down a bit if you think it is going too fast.
  4. Fry the ribeye for 2 minutes per centimeter per side. 
  5. Remove the ribeye from the pan and let it rest under aluminum foil for another 5 to 10 minutes. Place the foil loosely over it
  6. Cut thin slices (carving) of your Wagyu ribeye with a razor-sharp knife and serve with, for example, tonkatsu sauce, sprouts and crispy toast.
