WHAT IS A BEEF WELLINGTON?

Beef Wellington is famously known as the signature dish of celebrity chef Gordon Ramsay. This dish consists of multiple layers. First, the chateaubriand is seared to create a good crust. Then, a mushroom mix of porcini and champignons, known as duxelles, is spread over a layer of Parma ham. The tenderloin is then wrapped in the Parma ham and duxelles layer. Finally, the wrapped package is tightly covered with puff pastry, which is then decorated. This process results in a rich, complex, and luxurious flavor profile.

This Beef Wellington features a Black Angus tenderloin sourced from grain-fed North American Black Angus cattle, also known as Nebraska Prime, which many consider the gold standard for beef. The meat is free from artificial additives, as beef should be. The cattle are raised according to the guidelines of the ‘Non Hormone Treated Cattle’ program, ensuring the animals are not given hormones, animal by-products, or preventive antibiotics. The USA Black Angus cattle graze on expansive pastures and are fed exclusively on plant-based foods such as grass, corn, and grains. This natural and healthy upbringing takes time, but it pays off in quality. Good beef requires care and respect for the animals, which is exactly what you get with the tenderloin from American Black Angus cattle!

Preheat the oven to 225°C. Once the oven reaches temperature, reduce the heat to 200°C and place the Beef Wellington in the oven for 25 minutes. After 25 minutes, remove the meat from the oven and let it rest under aluminum foil. (Check the core temperature with a thermometer; it should be 52°C.) After resting, slice the Beef Wellington and serve on plates.
