If you've got some time on your hands, there's nothing better than firing up the BBQ, right? Homemade chicken nuggets from the BBQ, for example—how fun is that? And totally doable too! We tried this recipe from BBQ Junkie, and the fun part is: you can pick your own favorite Doritos flavor. It’s all in the details. Add a nice dipping sauce and you're good to go!
Prepping the Chicken Nuggets
Start by lighting the BBQ and setting it up for indirect heat, aiming for a temperature of about 200°C (392°F).
Cut both chicken breasts into 6 to 8 equal pieces. Crush the Doritos into fine crumbs and place them in a bowl. Beat the egg in another bowl and put the flour in a third bowl.
Now take the chicken pieces and coat them first in the flour, then dip them in the egg, and finally roll them through the crushed Doritos.
BBQ'ing the Nuggets
Once your BBQ is up to temp, place the chicken nuggets on the indirect side and close the lid. Grill for about 20 minutes (depending on the size) until they reach an internal temperature of 70°C (158°F).
Remove the nuggets from the BBQ and serve them with your favorite dipping sauce.
