Korean Style Kalbi short ribs

Ingredients

Snacks for 4-6 people
1 kilo Korean Short Ribs
5 cloves Garlic
1/2 Onion
1 cm Fresh ginger (about the size of a thumb joint)
100 ml Honey
120 grams Light brown sugar
240 ml Soy sauce
200 ml Water with a dissolved beef stock cube
4 tbsp Mirin (rice wine)
3 tbsp Sesame oil
Freshly ground pepper
Salt (to taste)
1 Peeled Asian pear (or regular pear)
1 Peeled kiwi
Garnish
Sesame seeds
Spring onion

Kalbi short ribs, Korean ribs, Flanken Style, or Assado de Tiro… we're still not entirely sure what to call them, but they've been online for quite a while now — and they're wildly popular. David (@otakudaaf on Instagram) created an incredible Korean-style recipe with them, and of course we're more than happy to share it with you.

Kalbi short ribs in the marinade

Add all the ingredients to a blender in stages. Start with the onion, garlic, and ginger (it's easier if you add a splash of stock), give it a blend, then add the rest of the ingredients and blend into a smooth marinade. Marinate the Kalbi short ribs in it and leave in the fridge overnight.

Quick & hot Korean short ribs

Take the Korean short ribs out of the fridge about half an hour before grilling and let the excess marinade drip off a bit. Meanwhile, fire up your BBQ. Once it's piping hot, grill the short ribs for about 4 to 6 minutes per side. Don’t worry if they’re still a bit pink inside — that's exactly how you want them.

Both sides beautifully caramelised and crispy? Then plate them up and finish with sesame seeds (quickly toasted in a dry pan) and thinly sliced spring onion.
