Pappardelle with mozzarella sausages

Ingredients

4 Livar sausages with mozzarella, basil, and sun-dried tomatoes
1 Medium yellow onion, diced
1 Red bell pepper, thinly sliced
½ Red chili, deseeded and finely chopped
2 cloves Garlic, finely chopped
2 tbsp Tomato paste
425 g Diced tomatoes (canned)
150 ml Passata pomodoro
½ tsp Dried basil
½ tsp Dried oregano
250 g Fresh pappardelle
1 ball Mozzarella, torn into pieces
25 g Parmesan cheese, grated
3 tbsp Fresh basil, chopped

Easy, quick, and super tasty, this recipe from @vurigekolen! Our sausages with sun-dried tomatoes and mozzarella are perfect for a flavorful pasta and add just a little extra dimension to this dish. A real treat!

One-Pan Pasta Preparation

Slice the sausages and heat a knob of butter in a pan over medium heat. Fry the sausage slices until golden brown and crispy, then remove them from the pan and set aside.

Use the same pan to sauté the onion, bell pepper, and red chili until soft. Then add the garlic and fry briefly for extra flavor.

Stir in the tomato paste and cook for about a minute to bring out the flavors. Next, add the diced tomatoes, passata, dried basil, and oregano. Bring to a simmer and let the sauce cook gently for a few minutes.

Add the pappardelle to the sauce and cook on low heat. Stir regularly so the pasta absorbs the sauce and doesn’t stick to the bottom.

Return the fried sausages to the pan and mix everything together.

Finally, add the mozzarella and Parmesan cheese and let them melt for a creamy finish.

Serve the pasta with a generous handful of fresh basil and extra Parmesan as a finishing touch. Enjoy your meal!
