Tiroler Grostl with bacon, sausage & schnitzel
Tiroler Gröstl, the ultimate winter comfort food, right? Real power food with a capital P. No wonder it’s a classic for winter sports. We’ve packed it extra hearty here—with bacon, sausage, and schnitzel—but of course, you can always leave out whatever you like… You can toss some or all ingredients in your shopping cart, but really, just make it how you like!
How to make Tiroler Gröstl
Cook the baby potatoes in a frying pan for about 10 minutes until tender. Add the green beans during the last 3 minutes (unless you like them fully cooked) and then drain everything. Slice the smoked sausage and, in another pan, fry the bacon and sausage for 10 minutes. Add the mushrooms and cook for 5 more minutes. Beat 4 eggs and add them to the bacon, sausage, and mushrooms. Keep stirring until it looks like scrambled eggs, then mix everything with the potatoes and green beans.
Let it simmer for a bit longer while you fry 4 schnitzels (half a schnitzel per person is usually plenty, but you decide). Finally, fry the remaining eggs as sunny-side up.
Divide the Tiroler Gröstl over 4 plates, top each with a schnitzel and a fried egg. Sprinkle fresh chives on top and serve warm. This will keep you going for a while ;-)
