Back of venison whole

Whole deer back
Whole deer back is one of the finest cuts of game. The meat is tender, delicately textured and has that distinctive, full game flavour that true enthusiasts love. Perfect for a special dinner or a classic dish with character.
What is whole deer back
The deer back comes from roe deer that live freely in the wild. This gives the meat its pure flavour and fine texture. Because this part of the animal moves very little, it is remarkably tender. Deer back is often roasted whole or cut into medallions. Season it simply with salt, pepper and a sprig of thyme, and let the meat speak for itself.

Preparing whole deer back
A whole deer back is a beautiful cut of game, lean and refined in flavour. The meat stays at its best when cooked gently. A meat thermometer is essential for achieving a perfectly cooked result.
- Take the deer back out of the refrigerator well in advance so the meat can come to room temperature.
- Pat the meat thoroughly dry with kitchen paper.
- Season the deer back with salt and pepper.
- Heat a mixture of butter and oil in a large pan over medium heat.
- Sear the deer back gently on all sides until golden brown to create a nice crust.
- While searing, add a sprig of thyme and some rosemary to the pan for extra aroma and flavour.
- Once nicely browned all over, place the deer back in a preheated oven at 150°C.
- Use a meat thermometer to check the internal temperature, this is essential for perfect cooking.
- For a beautiful medium rare result, aim for a core temperature between 55 and 58°C.
- Remove the deer back from the oven, cover loosely with aluminium foil and let it rest for 10 minutes before carving.
