The meat of domestic rabbits is lighter and more subtle in flavor than that of wild rabbits. The meat has a less strong gamey flavor and is therefore very popular with people who normally find game too intense.

The rabbit legs have a slightly sweet taste. The taste is a lot more neutral than that of wild rabbit. The meat has a soft and slightly firm structure, it is also lean meat and rich in proteins. The legs also contain little fat and cholesterol and are a good source of vitamin B minerals such as iron and phosphorus.

PREPARING TAME RABBIT LEGS

Domestic rabbit legs can be used for various cooking techniques. A classic preparation method is a rabbit stew with white wine. Other people choose to roast or grill the legs for a faster and easier preparation. However, confit is really worth a try! Rabbit meat goes wonderfully with aromatic herbs such as thyme, rosemary and sage or with sweet flavors such as plum, honey and apple. PREPARING DOMESTIC RABBIT LEGS

Preparing domestic rabbit legs isn’t difficult, but it does require some care to keep the meat tender. Follow the steps below for the best result.

  • Defrost the rabbit legs and bring them to room temperature. Our legs are delivered frozen: let them thaw slowly in the refrigerator a day before cooking, and take them out an hour before baking.
  • Pat the meat dry with kitchen paper and season the legs with salt and pepper. This helps create a beautiful crust while searing.
  • Heat a mixture of butter and olive oil in a pan over medium heat and brown the legs on all sides until golden. Add rosemary and thyme at the end so their aromas can develop.
  • Place the legs in an oven dish, pour the cooking fat over them, and continue cooking in a preheated oven at 140°C.
  • Let the legs cook for 30 to 40 minutes, until they reach a core temperature of 70°C.
  • Then add a glass of white wine and some stock so the legs are half covered. Add some tarragon and a bay leaf as well.
  • Cover the dish with aluminum foil and return it to the oven.
  • After about 20 minutes, when the legs have reached a core temperature of 82°C, remove them from the oven.
  • Loosely cover the meat with aluminum foil and let it rest for 5 to 10 minutes so the juices can redistribute.
