Lamb tournedos Agnei Iberico

Agnei Ibérico lamb tournedos
A tournedos is a small round piece of meat known for its tenderness. In lamb, this cut is taken from the back, yielding attractive portions that are quick to prepare. Just a quick fry in the pan or on the grill and you have a piece of meat that needs nothing more than a little salt and pepper.
What is a lamb tournedos?
The tournedos is compact in shape and is taken from the back. The meat has a fine texture and therefore remains even during cooking. You don't have to do much with it: just sear it and then cook it briefly. This makes it a piece of meat that is easy to prepare, but still feels special to serve. Agnei Ibérico comes from Aragón in Spain. The lambs are given time to grow and are fed grains and corn. This results in meat that is tender in texture and has a distinct, full flavor. The breed has been prized in Spain for years and is often found in professional kitchens. It is lamb that is slightly richer and more pronounced than you are used to.

Baking tournedos step by step
- Remove the tournedos from the refrigerator and packaging at least an hour in advance so that they can reach room temperature.
- Pat the tournedos dry with kitchen paper and season with salt and pepper to taste.
- Put a pan on the stove with a dash of oil (or a large knob of butter).
- Place the tournedos in the pan as soon as the oil is hot and fry for about 1 minute per centimeter per side. Is your tournedos 2cm thick? Then fry it for 2 minutes per side. Would you like to bake at core temperature? Then maintain the following core temperatures: rare 48 degrees, medium rare 50 degrees, medium 52 degrees and well done 56 degrees.
- Wrap the tournedos in aluminum foil and let rest for five minutes.
TIP: Do you bake on gas? Then keep the steak moving well. On induction it is better to leave it alone, except for running.
