Heart Attack burger
This over-the-top and ultra-photogenic recipe by Robert van Dijk (@vurigekolen) is inspired by the Heart Attack Grill, a famous restaurant in downtown Las Vegas, where the menu only features junk food – like a double bypass burger – and the staff walks around in hospital uniforms. Perfect for the true meat lover, though of course, you can always skip a layer…
Preparation Heart Attack Burger
1. Prepare the BBQ for direct heat and place a plancha or cast iron skillet on the grate. Let it get piping hot.
2. Mix the BBQ rub into the ground beef and divide into 3 equal balls. Refrigerate until use.
3. Heat a bit of sunflower oil on the plancha or skillet and slowly cook the onion rings on the side over low heat. After a few minutes, add the brown sugar and balsamic vinegar. Let caramelize until the onions are soft, glossy, and deep brown. Set aside.
4. Fry the pancetta until crispy and let drain on kitchen paper.
5. Warm up the loaded meat Texas Brisket in a small pan on the BBQ or directly on the plancha, whichever you prefer.
6. Slice the brioche bun in half and toast the cut sides briefly on the plancha until lightly crisp.
7. Place the beef balls on the hot plancha and smash them firmly with a burger spatula. Cook for 2–3 minutes until the bottom is crispy. Flip, add a slice of cheddar to each patty, and cook another 1–2 minutes until the cheese has melted.
8. Time to stack it up!
