What is a tournedos?
A tournedos is cut from the centre of the tenderloin, the most tender part of the cow. Because this muscle does very little work, the meat is buttery soft, free from fat or sinew. That makes it ideal for those who love lean meat with a delicate texture. Internationally known as ‘filet mignon’, this cut is prized for its uniform shape and elegant appearance. Step-by-step guide to cooking tournedos
- Take the tournedos out of the fridge and packaging at least one hour in advance to bring it to room temperature.
- Pat the tournedos dry with paper towels and season with freshly ground pepper and salt to taste.
- Heat a pan with a splash of oil (or a generous chunk of butter) on the stove.
- Once the oil is hot, place the tournedos in the pan and cook for about 1 minute per centimeter on each side. If your tournedos is 2cm thick, cook for 2 minutes on each side. If you'd like to cook it to the perfect core temperature, use the following temperatures: rare 48°C, medium rare 50°C, medium 52°C, and well-done 56°C.
- Wrap the tournedos in aluminum foil and let it rest for five minutes.
TIP: If you're cooking on a gas stove, keep the steak moving for even cooking. On induction, it's better to leave it undisturbed, except for flipping it once.
