- Let the meat thaw slowly in the refrigerator, then take it out in time to reach room temperature.
- Pat the meat cubes dry with paper towels so they can brown nicely later.
- Season the meat generously with salt and pepper and lightly dust it with flour. Mix well so every piece is evenly coated.
- Heat a knob of butter or some oil in a heavy casserole and brown the meat in batches until golden all over. Remove it from the pan and set aside.
- In the same fat, add some finely chopped onion, carrot, and celery, and sauté briefly until the vegetables start to color lightly.
- Return the meat to the pan and, near the end of browning, add a sprig of thyme, a few crushed juniper berries, and some rosemary so their aromas infuse into the fat.
- Deglaze with a splash of red wine or game stock and add a bay leaf. Make sure the meat is just covered.
