What is tenderloin?

The tenderloin is the most luxurious and tender cut of beef. Located along the inside of the back, this muscle sees very little activity, which makes the meat extremely soft. For a Wellington, the centre-cut is preferred, also known as the chateaubriand. This is the thickest and most uniform section of the tenderloin, offering the juiciest bite. Its subtle flavour easily absorbs other ingredients like mushrooms, ham or herbs, making it perfect for a festive dish where texture and finesse are key.
