As a third-generation butcher, craftsmanship has been in my blood from day one. Through the stories my father and grandfather told me about the Rundvleesweken (Beef Weeks), I know it used to be a real event in the butcher’s world. During those special weeks, beef took center stage with offers on juicy steaks, rich stewing cuts and freshly ground mince. It was a Dutch tradition everyone looked forward to.
